About Me:
My name is Emma. I enjoy maintaining a healthy and active lifestyle.
I like working out, running, reading and I grew up playing competitive soccer. My hometown is in Michigan and I'm a Detroit Tigers Fan. I also love dogs (I had a German Short-haired Pointer growing up) and want a Corgi someday. My boyfriend and I moved to Seattle, WA in January 2015.

When and why did you move to Seattle?
We moved in January 2015. At our lives, my boyfriend and I were ready for a change. We were ready to start fresh and push our boundaries. We also wanted to look at settling down in an environment where we could do more outdoorsy stuff.

My Food Philosophy: 
I believe that everything should be in moderation. Food engulfs all of your senses and it is an experience. I think eating should be an enjoyable aspect of life except it should be in moderation. For example, if I'm on vacation and there are new foods (potential unhealthy foods) to try, I'm not going to limit myself on the culinary experiences. I generally eat healthy 80-85% of the time. So, I allow myself room to make unhealthy choices every now and then. But I don't make those unhealthy choices a habit. Unhealthy foods  can have a detrimental effect to your body over time like obesity or diabetes.Which is why, I believe your everyday food choices should be leaning towards a healthier mind,body and soul. I mean, you only get one body to take care of. No tradesies backsies.

How did you get started cooking?
I've always enjoyed good food. I learned how to cook from my mom and I’d like to thank her for teaching me the basics. I’d watch her make dinner or I’d help out making cookies. One of my family holiday traditions is we'd always make 3 types of cookies. We’d make pizzellespritz and then I'd find a new cookie recipe to try out. I always enjoyed finding new recipes for us. My family was busy back then and I’d start making dinner to help out. I’d make simple things like soup or tacos. It wasn't until I started living with my boyfriend did I start to venture out into jumping cooking. I’d find a good recipe, get all the ingredients (since I’m paying for my own groceries) and then try it out. I enjoy making new and exotic recipes and I love teaching myself new techniques and skills in the kitchen.

So, what inspired the name "The Emerald Foodie Gal"?
I want to move to live in Seattle and know that Seattle's nickname is the "Emerald City." When I first  visited Seattle, I fell in love with the city and still love it.There are a lot of outdoor activities you can do, you're around nature, and there is a ton of fresh/local produce available. It might just be me, but if California, Chicago and Detroit had a baby it might look like Seattle. It's laid back and casual like California but has a bit of the hustle and bustle like Chicago. Then there's that gritty blue collar feel like some parts of Detroit. I love the casual, laid back outdoorsy vibe Seattle has.  If you hear me talk, you'll hear the Michigan accent. I say my "A's" differently and say pop instead of soda. Michigan will forever be my hometown.

No, I'm not on a specific diet although I do try to make 3-4 Paleo meals a week. My boyfriend's family has diabetes so I've been working to make sure our diet is enriched with healthy foods like fruits, vegetables, and lean meats. I also have eczema and grew up with it. I try to avoid a lot of highly processed foods, corn products (although I'll indulge in eating a fresh ear of corn every now and then because it's soooo good), eating tons of gluten and a lot of milk.
